African Ramadan Kitchens / مطابخ رمضان الإفريقية

 وكلواْ واشربواْ حتى يتبيّن لكم الخيط الأبيض من الخيط الأسود من الفجر ثمّ أتمّواْ الصيام إلى الّيل -  البقرة:187

"...And eat and drink until the white thread (light) of dawn appears to you distinct from the black thread (darkness of night), then complete your Saum (fast) till the nightfall..." [Q2:187]
   

Corn Dried Cake (aadun)

   
 

 

INGREDIENTS

INSTRUCTIONS
bullet2 cups of maize or corn (dried)
bulletSalt
bulletPalm oil
bulletDried Pepper
bulletGreen leaf or foil
bulletOnion if desirable
  1. Place the maize or corn in a hot pan
  2. Heat for about 15-30 or more minutes
  3. Allow it to brown
  4. Grind on a local stone or a Grinder until powdered (the onion too if desired).
  5. Add salt, palm oil, pepper and stir until mixed properly.
Serve in foil or local leaf for about 5 people.
