African Ramadan Kitchens / مطابخ رمضان الإفريقية

 وكلواْ واشربواْ حتى يتبيّن لكم الخيط الأبيض من الخيط الأسود من الفجر ثمّ أتمّواْ الصيام إلى الّيل -  البقرة:187

"...And eat and drink until the white thread (light) of dawn appears to you distinct from the black thread (darkness of night), then complete your Saum (fast) till the nightfall..." [Q2:187]
   

SPICY BRAISED CABBAGE

   
 

 

Yield: 8 portions

Prepare the cabbage using the above method, but add the following to the onions:

In a small bowl:

Combine: 1 tsp. SALT

1/2 tsp. CURRY POWDER

1/2 tsp. GARLIC POWDER

1/4 tsp. POWDERED GINGER

1/2 tsp. CHILI POWDER.

Saute with the onions and proceed as for Braised Cabbage, above.
